On /r/keto: I made a dip I think you guys would love.

I wasn't too hungry and sat in front of my fridge staring at food. Well I came up with an idea of chips and dip, well pork rinds and dip. I mixed cream cheese, sour cream, crumbled sharp cheddar, and crumbled bacon. It is so good. My son even liked it and he's pretty picky. It'd be really good with bell peppers and snap peas. Just thought I'd share with you guys!

Edit: I also added creole seasoning and onion powder.

On /r/keto: [NSV] best 3 pounds I’ve ever gained

In the one month since Jan 28th I have gained 3 pounds. But I am smiling ear to ear. I have lost 4 inches on my waist, 4 inches on my hips and 3 inches on my left thigh, and 1 maintenance med(cymbalta for pain from fibromyalgia, neuropathy,and arthritis, 1.5 week without, been on it many years tried half a dozen times to quit didn't last but 3 or 4 days before crippling pain) . I took out the garbage to the street without having to sit and rest after, shopped for an hour at Wally world came home and did not collapse but danced around the kitchen cooking and singing. (But first threw away the shirt I was wearing cause I kept exposing myself in Walmart due to it falling off my shoulders, this was 1st time I put it on in a long time) By the way I bought 10 dollars worth of Girl Scout cookies from the table in front of Walmart and told them to keep them " I don't eat those any more". Feel like dancing and hugging total strangers, it feels wonderful. All in one month

On /r/keto: How to get your electrolytes by eating food

I hate taking supplements. My asthma has me on enough meds and my mom used to all but shove vitamins down my throat all the live long day so I avoid taking that route at all costs. I want to get my requirements from food whenever possible, and I've mostly figured out how (short answer: eat enough spinach to make Popeye blush). If you've got other additions to this list, shout out in the comments and I'll add them.

(Note: for greens, the amount indicates a cooked portion)

Potassium You need ~3000mg a day

  • Spinach – 1 cup has 780mg of K and just 3g net carbs.
  • Beet greens – .5 cup of prepared beet greens will get you 650mg of for only 2 net carbs.
  • Avocados – an average one will have ~600-700mg and net you 2-3g net carbs.
  • Beet greens – .5 cup of prepared beet greens will get you 650mg of for only 2g net carbs.
  • Swiss chard – .5 cup of prepared swiss chard is a surprisingly tasty way to get 480g of K and it'll cost you 2g net carbs
  • Mushrooms – 1 cup has over 300g of K and only 2g net carbs.
  • Summer squash – 1 cup raw has ~300g of K and 1 cup prepared has ~350g for 2g and 5g net carbs, respectively.

Magnesium You need ~400mg a day

  • Pumpkin Seeds – A 1/4 cup portion is only 2g net carbs and has 190mg of Mg.
  • Spinach – 1 cup has 175mg of Mg and just 3g net carbs.
  • Swiss chard – That same .5 cup of swiss chard has about 75mg of Mg for only 2g net carbs.
  • Edamame – 3/4 cup is 75mg of Mg for 5g net carbs (plus probably a ton of sodium)

Calcium You need ~1000-1200mg a day

  • Cheese – you didn't need to be told this one. 😉 A 1/4 cup of cheddar has ~440mg of Ca and the same amount of mozzarella has ~460mg, all for about 1g net carbs each.
  • Spinach – 1 cup has ~290mg of Ca and just 3g net carbs.
  • Sardines in oil – no carbs and 210mg of Ca.
  • Tofu – Roughly half a package of extra firm tofu has ~160mg of Ca and only ~3g net carbs (plus 60mg of Mg).
  • Collard greens – .5 cup has 160mg of Ca and only 2g net carbs.

On /r/keto: [NSV] Ditched the rubber band!

For a little while now, I've been using the ol' rubber band through the button hole trick to give me a little extra, uh, breathing room in my favorite pair of jeans. Not an ideal situation, but it gets the job done until I "Get where I'm going" in terms of weight and treat myself to some new clothes.

Well, today I was in a hurry to get dressed and pulling on my jeans while attempting to pack my bag and, without realizing it at the time, I just buttoned them right up. A minute later I put my hand in my pocket and found the rubber band, which caused me to look down in disbelief and, yup! I did it! There wasn't even a struggle!

Goodbye, rubberband, you've served me well!

On /r/keto: [FP] I just made my own keto protein bar – success!

So, I stumbled across a Kickstarter campaign for savory protein bars. They looked great! Nuts, cheese, some had cured meat mixed in along with spices. They looked like whole food. Alas, whatever they use as binder is still kind of carb heavy. But it got me thinking.

It definitely holds together, it's dense, it's filling. I would absolutely make it again. Some of you might think the jerky is weird, but the jerky along with the light sweetness actually worked really well. I think if I made a bigger batch, they would hold in the fridge.

First shot recipe (2 serving batch for test purposes) Whisk egg white and sweetener together until frothy. I added a drop of vanilla which was not listed in MFP. Crack nuts into small pieces Dice jerky small. Combine all ingredients with a dash of salt to taste.

I made a little rectangle out of tin foil, and I lined the bottom with parchment just in case (probably not necessary.) i compacted the mixture to make it as dense as possible. Cook in oven on the lowest temp (mine is 200) for 10-20 minutes. You are really just trying to dry out the egg whites. The top should get lightly toasted.

Things I might change next time. – i added a delicate amount of sweetness. I might do full on sweet next time. – I may cut the sweetener all together and go all savory with spices like old bay or maybe even curry. I could see Parmesan and dried basil working too. – Coconut was thrown in just because it was the last bit I had, and I wanted to use it up (this would lower carbs). Sub in chia seeds (or more tiny filler ingredients) – Next time I may use more egg white.
